Salmon Patties

These are great to make ahead and have on hand for the week. I have them for breakfast sometimes with avocado and sauerkraut. They also make great protein snacks for late arvo when you feel like that 2nd or 3rd coffee.

Ingredients:

  • 1 x 400 g tinned wild caught salmon (Woolies and Coles both have wild-caught tinned salmon from John West)

  • 1/4 cup spring onion

  • 1-2 cups cooked and cooled mashed potatoe ( I like to use more mash to help balance the flavour for my kids

  • Herbs of choice - coriander, oregano, parsley all work well

  • ½ lemon rind finely grated ( an organic lemon won't have any wax on its skin if non-organic just omit the rind)

  • 2 Tbs Lemon Juice

  • 2-3 Eggs or (egg yolks for babies under 10 months)

  • Option: chopped capers and olives for an extra hit of flavour!

  • 100g almond meal for coating the patties

  • Coconut oil for frying

Method:

  1. Place all ingredients in a bowl and mix til combined

  2. Using your hand, take a palm size and roll into a pattie size.

  3. If using almond meal, have it ready on a plate. You can then cover the pattie in the almond meal and then place the pattie on a clean plate.

  4. Once you have made all the patties. Place in the fridge for an hour or two so they firm up. Then they are ready to fry in the pan with coconut oil

To Serve: I usually serve this with some sauerkraut and cut up capsicum, cucumber and tomatoes.
